Just my 2¢ here:
* It is not accurate to imply that any Apple framework or resource therein is going to "go away in the next year or two".
* The Apple GenericApp.icns will be around as long as JavaRuntimeSupport and JavaNativeFoundation.
* The Apple GenericApp.icns will stay as is (it will not be up-res'd or improved).

The GA'd versions of 7u4 have effectively locked the filesystem location of this icon in stone for their supported lifetimes, in addition to all of Apple's Java SE 6 versions. I wouldn't suggest using the Apple icon if there is better or more accurate iconography available, but there is no risk in having a runtime dependency on it, as there is already today.
