There is of course the BSD port - http://openjdk.java.net/projects/bsd-port/

It really depends what you exactly mean by 'will JDK 7 M3 work on Mac
OS'.  Are you talking about the source code or the builds produced by
Sun? How willing you are to get in there and get your hands dirty?  I
think it's safe to say there won't be a downloadable click-and-run
build for a long time yet.
