[8u40] Request for approval for CR 8056987 - 8u-dev nightly windows builds failed from 8/29

Please review this for 8u40.

The build of the image demo artifact failed due the inclusion on an 
extra (testing) zip file in the db sub-directory, so this change makes 
the build use a more precise pattern to extract the demo parts of the 
derby zip file. Without this fix, the build fails on
Windows.
