My looking at this was pretty late too, sorry. But again the System property did not work for me (10.7 reasonably current java 1.7). -Xdock:name=whatever did work. Having both might not be a bad idea. For a old Apple app I was uploading last night just changing the plist bundle name seemed to work. So it seems like covering as many bases as possible might be best for this.
bundle name + property + -Xdock:name
