Just to add my status to this thread, I've now got a solid build using
SoyLatte, and have got Remi's examples (from
http://weblogs.java.net/blog/forax/archive/2009/01/method_handles.html) up
and running in my environment (including inside Eclipse).
I've written up my efforts here:

but it's mostly just a collation of the various sources I've used for
my
build.
I've also been talking with some people from the Perl world about helping
with my toy Perl-like language (which will need to use invokedynamic
heavily, if I'm understanding the use case right). I'll put out a blog post
with the state of play on that project soon.
Still no dice with using OpenJDK7 to build mlvm - if anyone does manage to
get it to build on OS X, could they let me / the list know?
