Just to answer your question "What's a good way to stay informed about new JEPs and changes to existing JEPs?"
I have a JBS filter that finds all JEPs that has changed in the last week. https://bugs.openjdk.java.net/issues/?filter=35418 <https://bugs.openjdk.java.net/issues/?filter=35418>
It will show all changes, and obviously some changes are more interesting than others, but looking at it once a week isn't too much work. Usually there are 10-12 JEPs updated each week.
Modify the query to suit your needs.
