Shortcuts in Swing? (question for pals from Apple)

Ah. Been a while since I did much of anything with Windows, also I tend to more often use the mouse. 
I thought the Windows menu items still needed to be set as well and show the underscore equivalent to the Mac command symbol. 
I could be remembering wrong there.
I read once where you'd expect anyone you were hiring for the Mac to know all the keyboard shortcuts. 
Might explain why I was IBM mainframe.
